Tomato Cornbread Muffins Makes 10-12 Ingredients 225g full-fat natural yoghurt 1 tbsp tomato purée 2 eggs 50ml olive oil 115g fine semolina 115g plain flour 1 tbsp baking powder ½ small bunch of basil, chopped Sea salt and freshly ground black pepper 200g cherry tomatoes, halved Method ■ Preheat the oven to 190°C/ 170°C fan/gas mark 5.
Put muffin cases into a 12-hole muffin tin. Put the yoghurt and tomato purée into a large bowl then whisk together so the purée is evenly dispersed.
Tip in the eggs and oil then whisk until combined. ■ Add the semolina, flour, baking powder, basil and a big pinch of salt and pepper to the bowl then fold together with a wooden spoon until you have a smooth mixture.
Fold in 150g of the cherry tomatoes until combined. ■ Divide the mixture between the muffin cases, filling each three quarters full.
Top each with the remaining tomato halves, cut-side facing up, then a twist of pepper. ■ Bake for 30-35 minutes until golden and a skewer inserted into the centre comes out clean.
