During a hearing at Bolton Crown Court today (February 1) Kellie McGarry, 49, of The Crescent, Westhoughton, denied breaching two health and safety laws.
One of the counts was failing to ensure, so far as is reasonably practicable, the health, safety and welfare of her employees.
It related to an alleged failure to carry out a suitable risk assessment of the entry and egress of the cellar between September 11 2017 and January 13 2018.
The other count related to allegedly exposing Ms Horrocks to risk on January 13 2018.
Joseph Holt pleaded not guilty to a charge of failing to take reasonable measures to ensure that the pub was safe.
Ms McGarry and Joseph Holt are set to go on trial at Bolton Crown Court on July 18.
