When I get home, I follow the recipe - but due to my food allergies I swap normal feta cheese for a vegan alternative. Sorry, Kate. Now don't get me wrong, I love watermelon.
It is my go-to food for when I need to beat the heat - and right now watermelon is every Londoner's best friend. So adding it with cucumber and cheese feels illegal to me. After seasoning it with salt and pepper, I mix the ingredients together in my salad bowl.

My first mouthful brings my taste buds to life. Hints of pepper and sweet watermelon create a cocktail of pure pleasure. I'll be honest I did not expect this salad to taste so delicious.
It is a flavour bomb. The avocado cubes and the cucumber make my body feel like a temple - and the best bit is that the salad smells amazing. I pretty much hoover up my salad bowl within minutes.
Despite the last few mouthfuls being watery - I want more. Every bite feels like a meditation session. My body feels hydrated, relaxed and nourished.
