Champagne is made in the traditional method specifically with Chardonnay, Pinot Noir and Meunier grapes. Sometimes they're blended and sometimes they're not but it is always these three grapes. That's because of French wine law and the prestigious reputation of the wine.
Crémant is made in the traditional method but from grapes from different regions of France, so you'll find a Crémant d'Alsace is quite different to a Crémant de Bourgogne as different grapes are used. The rules are still quite strict with Crémant however different grapes are permitted so as a result you'll find more variation.
