Tea is an important part of the English culture, which is why it comes as no surprise that the debate of whether milk or water goes in first has been raging since the dawn of time. But it turns out there is actually a correct way to make a cup of tea and most of us have been doing it wrong.
Dr Andrew Stapley, a chemical engineer at Loughborough University, has been crunching the numbers and determined that putting milk in first is the scientifically right way to make a cuppa. If that wasn't enough, it turns out the tea should be poured into the milk.

It means the quality of the milk would be altered, which is the main reason why floaty bits appear at the top of the mug.The flavour of the milk also gets lost when poured in second, according to the research.
Milk before tea also counteracts hard water as the proteins can lower the mineral content of the waterand bring back the flavour into the concoction. Dr Stapley step-by-step guide to making the perfect tea goes as follows: Use Assam tea Use a clean, warm china or earthenware pot Add one spoonful of tea (or tea bag) per cup Use freshly drawn water, boiled once only to retain as much oxygen as possible to bind with tea polyphenols Avoid hard water (calcium ions) to prevent tea “scum” Best flavour is achieved using a high temperature, but short time infusion Stir the teapot Leave to brew for 3 minutes Add the tea to the milk – rather than the other way around Add sugar if you like but only use white sugar and not too much Drink tea
