What comes to mind when you think of fine dining? Perhaps it’s starched white tablecloths and not a single piece of cutlery out of place. Or maybe it’s an elaborate, multi-course tasting menu where the ingredients are reeled off as if you’re in an episode of MasterChef.
There are certain preconceived notions about these environments, the words stuffy or intimidating might spring to mind. But in recent years, the face of fine dining has begun to shift thanks in part to a group of young chefs eager to make it more accessible.
One of those individuals is Tom Barnes. The chef, originally from Barrow-in-Furness confirmed late last year that he would be opening his first restaurant in Manchester, a 36-cover restaurant in the NOMA neighbourhood of the city.

The news was met with great fanfare. See, this isn’t just any chef, but rather a Roux Scholar and Simon Rogan alumnus who has lived and breathed fine dining since the age of 18 when he began working at the two-Michelin-starred Vineyard at Stockcross under chef John Campbell.
Since then, he’s spent his career working exclusively in Michelin-starred environments. From The Square with chef Phil Howard, to his internship, known as a ‘stage’ in chefs terms, at Geranium in Copenhagen under the renowned Rasmus Kofoed.
He is perhaps best known though for his 12 years with leading chef Simon Rogan at UMBEL Restaurants. Here, he was head chef at Rogan & Co in Cartmel when it received a Michelin star, and executive chef at L'Enclume (a three-minute walk away), when it gained its third Michelin star.
