When asked about the reason for his dish, Wynne said his was in honour of his Belgian grandfather who had to flee the country during the war. In honour of him and his story, Wynne cooked Boudin Blanc - creamy white sausage with chicken mince flavoured with truffle, nutmeg and thyme - Stomp (mash potato, carrots, leeks and bacon) and beer-braised chicory topped with an onion and Belgian beer gravy.
