The UK’s first vegan hotel is launching an exciting new Autumn dinner menu. Boutique hotel Saorsa 1875, which is located in Pitlochry, is dedicated to providing a luxury dining experience that is 100% plant-based.
Where possible, the ingredients for all of their dishes are sourced ethically from the hotel’s gardens or local Perthshire farms.
The new menu will rotate, meaning that different dishes are served each night. 3-courses are available Monday to Wednesday for £35pp (residents and non-residents), while 5-courses are available Thursday to Saturday for £55pp (residents) or £60pp (non-residents).
Bookings will be open to residents and non-residents alike – however you will still need to book in advance.
Aiming to "subvert the traditional expectations" of vegan cuisine, the new menu will offer dishes such as Szechuan Pavlova with Blackberry & Beetroot Sorbet and Lemon Curd; Black Truffle Macaron with Yuzu Pearls & Bay Leaf Ice Cream; Patis Glazed Aubergine with Cabbage, Radish & Sesame Emulsion; Marmite Potatoes with Tarragon, Almonds & Watercress Sauce; and Confit Fennel with Apple & Marjoram Glaze.

The new menu will be paired with a selection of complimentary wines and seasonal apéritifs curated by Food and Beverage Manager Lucy Gordon.
Since opening its doors in 2019, Saorsa has been committed to showing that the best experiences in life don’t have to come at the expense of animals.
Head Chef Debborah Fleck commented: “Our menus are inspired by season, local produce, environment and global influences. We aim to create dishes that are exciting, have a story and focus; flavours and textures by preparing dishes that
