Coronation Chicken is a classic dish to serve at Royal-themed events, either as a sandwich filler or a dish of its own. Constance Spry, an English food writer, is believed to have come up with the recipe, and prepared it for The Queen's Coronation banquet in 1953.
It seems only fitting that the classic curry-flavoured chicken dish is served up again nearly 70 years down the line to mark the Queen's Platinum Jubilee. BBC Good Food has come up with a recipe for Jubilee Chicken, a variation of Coronation Chicken, which features the addition of apple, walnuts and pomegranate.
