I’ve never stuck to a diet in my life. Keto, Paleo, Atkins, Slimfast, Slimming World, WW – you name it, I’ve tried it. When looking for inspiration on YouTube in the form of ‘What I Eat In A Day’ videos, I came across a few people who only ate fruit and vegetables – they spoke about how they alleviated their symptoms similar to mine and they were glowing.
Some even put their autoimmune diseases into remission – it was worth a try I decided. So that night, I popped to my local supermarket and filled my trolley with fruits and vegetables (including nuts and legumes for protein) for the week. Although slightly more expensive than my normal weekly shop (I normally spend £60 a week for two people and I spent £75), I knew it would be worth it if I got that glow and could actually ease my symptoms.
